RE: I don't think there is any doubting Jon Jones now

Calling my fights pro is a bit of a stretch. It was a local organization back when UFC was still illegal in most of the world. This was in the late 90's and we weren't even allowed to record it because I am pretty sure it was unlicensed unsanctioned and completely illegal. We didn't really concern ourselves with such things though because it was so low level that if the police heard about it they probably didn't even care. For those of us that participated it was more of a prestige thing than it was any sort of dream of hitting the big time.
