My Actifit Report Card: March 16 2022

Breakfast was scrambled eggs and cheese with ham on a ciabatta roll. We watched some episodes of Supernatural while my wife sewed her quilt project and I worked on the computer. Because we had woken up early 4:30 instead of the usual 6:00), we had “second breakfast”. This was a whole wheat muffin with peanut butter in it. We then continued to binge watch Supernatural.

Lunch was a turkey cheese burger on a toasted ciabatta roll. When I mix up the patties I usually add the spices, sliced scallions and some oat flour. The flour to absorb some of the fat and water and keep them juicy. Then my wife went to the studio. I did the chores around the apartment and played some Crusader Kings II on the computer on my Steam account. I really haven’t had a chance to do that since before the holidays last year. Since St Patrick’s day is coming I played Ireland. Got my butt kicked after a few hours so that was that.

For dinner I put about 12 ounces of ground turkey in my heavy duty skillet to fry. I had added about 3 tablespoons of olive oil and kept stirring and breaking it up into smaller pieces. I added a third of a small white cabbage I had cut up and threw that in. I added some salt and pepper along with a little oregano and basil. As I was stirring I was still breaking the meat up until it was crumbles. I added some leftover white rice from dinner the other night when the cabbage was cooked and then added a jar of pasta sauce. When it was all mixed I let it simmer. It was more or less a deconstructed stuffed cabbage dish. When serving I topped with shredded cheddar cheese.

After dinner my wife and I went down to the garage to bring the garbage can and recyclable can to the curb. We then went up and watched some episodes of Supernatural until bedtime. It was an early bedtime because of waking so early (8pm instead of the usual 10pm). Anyway, thanks for reading.
