Today I bring you a delicious recipe based on mushrooms that we will use in a typical recipe of Italian origin called lasagna which enjoys international prestige only that the original version carries products of animal origin, while the recipe that we will prepare is the vegan version with natural products with proposals of vegetable protein, mushrooms are an ingredient used in multiple gastronomic preparations, provides an exquisite flavor and are also economical. Vegan Lasagna (mushrooms)

♡ 1 cup finely textured soybeans
♡ 1/2 large onion (or a small one)
♡ 2 Crushed tomato
♡ 50 gr flour
♡ 300 ml vegetable milk
♡ 1 handful of rolled almonds
♡ Salt
♡ Olive oil

The first step will be to prepare the traditional bechamel or white sauce, is a sauce that is used in several dishes and this is one of them without bechamel or white sauce no lasagna, so let's get to work, we will choose our best pan to make the preparation faster, we will save some time. After it is ready we reserve.
In this case we will do as it is the original preparation we will put the flour in the frying pan and we will leave a few minutes so that it warms up, next we incorporate the vegetable milk, tries to throw small quantities, the idea is that they do not remain groups. I advise not to add too much salt. Let's just wait for it to thicken and put out the fire.
Previously we will put the mushrooms to soak so that they hydrate a little, then we will cut not so finely, but or less of thickness of our finger, then in we will preheat a frying pan with a generous jet of oil, we will throw the mushrooms and we will take to medium fire, we only must wait that they brown by both sides.
The next step will be to take the seeds of almonds and we will place them to toasted in a frying pan to medium fire.
Next wash the onion very well and cut it, then put it to sauté with a little olive oil until it crystallizes, at this precise moment we must incorporate the textured soybeans that we have previously hydrated and drained very well with the help of a clean cloth to remove all the water we can. After the soy is well mixed with the onion, add the crushed tomato, and the rest will be to finish cooking over medium heat. Then turn off and set aside.
Now we only have to assemble our lasagna, the procedure is quite simple, we just have to orderly place the slices of mushrooms, and for each layer of mushrooms, cover with the filling of soy, onion and tomato and so on, the last layer will be mushrooms, and is when we bathe with bechamel sauce and almonds.
