Eggplant salad & Actifit December 13 2023

Yesterday the weather turned 180 degrees, from snow to rain, and it was serious rain, not being able to drive without using the wipers. I've been out with Max for a couple of hours, but was in no mood to take my phone out and take pictures. :)) So I'll post some leftovers, just the images, not the food. :)) This mix is made from grilled/roasted courgettes/eggplant on a hot pan or grill or simply on an open flame. Then, the pulp is scooped out and mixed with diced onion and other spices according to taste. Usually served as is or as a side dish as well. Ohh, and it's called "eggplant salad", no idea why because it doesn't resemble a salad at all...
