My Actifit Report Card: July 11 2022
I awoke late because I went to bed really late yesterday, at 2 a.m. I was so absorbed in my Kdramas that I forgot about the time. I don't have any work today, therefore I can't be bothered. LOL
So, I started my morning about 10 a.m. with a black brewed coffee, then gazed at nothing for about an hour before hitting the treadmill for my usual walk, jog, and run. I lasted for 50 minutes before heading straight to the kitchen to prepare my meal.
In the rice cooker, I combined brown rice, Quinoa, frozen vegetables, mussels, and shrimp before seasoning them with salt and pepper. I was too lazy to sauté them to make fried rice, so I just did what I saw on TikTok. It did work and was tasty after that. YUM.
Then I made Bangus Paksiw, a traditional Filipino fish stew made with milkfish, vinegar, and spices such as ginger, onion, and garlic. I preferred it sour, so I added a generous amount of vinegar. I set them all aside after cooking because I am on Intermittent Fasting and will eat in the evening. I took an hour of rest by lying down on the floor with my feet up half the time and scrolling on my phone. Hehe!
Then I have to make a move as I needed to go to my 90 minutes kpop and Zumba class. I hadn't danced in a long time, so I was excited to finally have the chance to do so today. I suppose I went there about two months ago. I wish I could go more regularly, but job and other responsibilities keep me busy most of the time.
That's pretty much how my Monday went, Actifitters. LOL
