Step back Gordon BBQ day : March 2 2025

(Edited)

Had a few big days walking days in the last week. Got a good way to have an easier day. My wife had been invited to a baby shower. That leaves us boys free to get together for a bit of a barbecue. Did the prep yesterday - beef short ribs

A simple meal for 3 blokes. Eye fillet seasoned with salt and pepper and pierced with garlic slices and smothered in Dijon mustard.

Beef short ribs sous vide at 155F for 24 hours - season with salt and pepper and a teaspoon of liquid smoke

Did make my own BBQ glaze - reduce the juices from the sous vide bag. Add in a mix of sweet and sour - mix it up to taste. Maple syrup, chopped fresh garlic, tomato sauce, Worcestershire sauce, apple Cider vinegar, black pepper, mustard, a little spicy - I used mango habanero seasoning. Make it up - sweet and sour and enough liquid to stop it sticking or burning. Reduce and reduce - then strain to add to the ribs when they go on the bbq. Cheat add - microwave potatoes for 1.5 minutes - drizzle with a bit of oil and pop on the grill and turn a few times

Wine is a 2003 Hunter Valley Shiraz from Kelman Vineyard - where I owned a house from 2002. This was our first red vintage from a very hot year - wine just holding on after 22 years

Double flowered bougainvillea from their garden. Did not have to walk home as my wife arrived to drop her friend off. Good thing I walked down and turned down the offer of a ride - would not have got the steps in

Hibiscus flowering where the car was. Not raining yet

Did have to cook twice - pizza for dinner

That looks delicious Mark!

I also did meal prep of the boring and basic kind... but at least I too seasoned it well :)
