Another rainy Shoalhaven day - roasted quail for dinner : November 30 2024

Was a difficult night. Rained all night and hard a lot of the time. Not conducive to get a good night. Rained almost all day - made for an inside day - did the investing accounts. Mumbled around like a caged lion

Did squeeze in an umbrella walk up the road toward the mountain. Crucifix orchids next door - not the best photo

Walked the opposite way to normal to get photos of Coolangatta Mountain - this one framed with kangaroo paw flowering

Got friends coming over for dinner - making roast quail - a cube of butter, slice of lemon, garlic clove and a sprig of rosemary stuffed inside

Herb butter - rosemary, sage, organo, parlsey picked from the vege patches around the estate.

No photos of the next stage - separate the skin over the breast and slide in the herb butter. Back of a teaspoon and a lot of patience needed. Do not want to piece the skin

Stuff the quail - tie up the legs and cook for 35 minutes at 180C. While the quail rests, make a jus with the juices, a bit of white wine and chicken stock

Served with potatoes baked whole and Brussels sprouts and asparagus
