Chatswood for a change of scene : July 19 2024

A late night for markets and Tour de France makes the body not keen to move. Did the investing accounts in the morning. Had my lunch and went walking to do some shopping. Chose to go the other way to catch a train to Chatswood - something different

Walked to Killara Station - nice quiet walk a lot along the railway line

Just missed one train. Can see the next one standing in Gordon station - not when 2 kms away

Chatswood has become a popular home for people who came from Hong Kong in 1997. Lots of the restaurants started in 1997. They are now running street markets for weekends starting Fridays - lots of SE Asian foodstalls

Met this lady and her dog on the corner before. Should have followed her all the way as she was heading to the Aldi supermarket I was aiming. I loved her style - quite European. I walked the big block looking for the entrance

The extra walk did find the Hidden Izakaya - it is in the courtyards of Chatswood Village

Some op art in the fountain in front. Did find the Aldi and got the few middle aisle items I wanted

Did avoid buying Chinese style bbq duck as we were planning our own duck breast dinner. Steps

Pat the duck dry. Score the skin side. Season skin side with salt and other side with salt and black pepper

Pop in sous vide ar 135F for 2 hours

Made a red wine jus - saute chopped onion and garlic. Add in red wine - sear off the alcohol. Add chicken stock and two tablespoons of cranberry relish or something like that. I used fruit chutney as that is what we had. Reduce and sieve to leave a clear sauce - pop in a dollop of butter

Sear the duck - skin side down first for 5 minutes then the other side for 5

Served with Brussels sprouts and duck fat potatoes cooked in the airfryer - seasoned with rosemary, thyme and garlic. 25 minutes at 175C works - trial and error result

Watched Tour to the end. Tadej Pogecar was amazing. Would love to meet him. I have a chance as he is friends with my friend Markoh Baloh.

Trade action. Adjusted RR.L options again. Bought LTBR, NNE.
