Promise of orchids - Delivery of Rack of Lamb : January 18 2024

Not the best night - awake a few times. Do have an early start as I am looking after Lucy while my wife and her friend go to knitting group. Lucy is recovering from de-sexing procedure yesterday. She was a lot more sedate then normal - anaesthetic does that

Spent time just sitting to keep her still. Was a challenge.

We drove down to Nowra when they got back to do a little shopping.

Was really tired but forced myself to get on the bike to walk a bit when we got back. Been missing that on the series of rainy days we had in Sydney

Turned into a bit of a mushroom shoot. Not surprising as there has been a whack of rain

A few of these with super white tops. Camera hates them as they put out too much white

Was hoping to find some orchids open on known spots. The most likely has been nibbled - this was one of the next to best

This one is a few days behind - dipodium variegatum - common hyacinth orchid

Mushroom in the middle of the track on the way back. Palms are reclaiming the track

Knocked one over to get photo of the underside - spores will reproduce just fine

Saw this bug on top of a leaf. There were a bunch under the leaf adjacent

Good to get out on the bike and to get walking

Part of the shopping mission was to source dinner. A rack of lamb cutlets frenched. Our friend loves lamb. I have never cooked one

Step one - make up the herb crust. Needed some invention: fresh oregano, rosemary, parsley plus toasted macademia and walnuts and garlic smashed in food processor.

The art is to render down the fat. Season the rack with salt and pepper and lay fat side down on a hot source - I used the bbq. Could have gone longer

Take off heat and lay on the herb crust. Used mustard as the glue. Then back on bbq, bone side down for a good 20 minutes - hood down.

Trust the process. Do not turn the crust toward the heat - it will just burn. Good time to do the other stuff. Airfryer chicken for my wife. Fresh beans

Lamb was super tender. Would have liked the fat rendered down another 5 minutes. Our guest was happy. Chef was happy at the first attempt

Trade action: Bought LLOY.L, TLT, NCLH, LXS.DE - all assigned early. Adjusted IWM.
